I hate this book. I needed for a food service management class for my dietetics degree and also for a cdr board certification more recently. It's just a bunch of terms and abstract concepts. It is very boring to actually read it, as again, there is so much conceptualizing. It is only useful for looking up terms and definitions. When you actually get into a kitchen, all of this nonsense is thrown out the window except for maybe food safety. It has all the things you need to know for RD exam and such, but there has to be a more a more interesting book out there with a realistic perspective on food service. Most likely this is required for a class, but if you are a professor trying to choose a textbook to use, please consider literally anything else.Product details

Book provides great summary and definitions to follow. Easy read with lots of pictures and examples. Not to bad as far as textbooks are concerned.
